Texas flavor found at Huntsville restaurant

Husband and wife Greg and Sheri Farley, co-owners of Huntsville Barbecue Company, say they love living and working in Ogden Valley and getting to meet visitors from all over the world.

Greg Farley grew up in Austin, Texas, and said he missed his hometown barbecue after he moved to Utah to go to college. As a student, he and his friends threw barbecue parties and started a catering business. When the Farleys decided to open their own restaurant in Huntsville three years ago, they traveled to Texas to tour the most famous barbecue restaurants and interview the pit masters.

"We went back to where Greg had found his love for barbecue," Sheri Farley said. "We wanted to bring as much of the Texas style here as we could, because we love it."

Although the meats take center stage at their restaurant, Sheri Farley said she wanted to make sure to have tasty side dishes as well. She created the recipes for their barbecued beans, broccoli slaw, potato salad, coleslaw, loaded mashed potatoes, homestyle chili, red pepper cream corn and side salads ($1.85/individual or $3.94/pint).

In 2011, the restaurant took the title "Best of State" at a cooking competition. The award-winning meats include beef brisket, pulled pork, smoked chicken, pork spareribs and mild or spicy sausage ($10.66 for one meat and two sides). Customers can enjoy five meats and four sides with the Texas Sampler, a meal large enough for two to enjoy ($23.98).

The Farleys also serve their meat on sandwiches, such as the chopped beef brisket ($6.03), pulled barbecued pork ($5.56) and pulled chicken ($4.87) -- served with sliced pickles and onions.

For dessert, the Farleys offer a collection of treats such as peach cobbler ($3.48), banana pudding ($3.25), pecan pie bars ($3.71) and Texas sheet cake with pecan chocolate frosting ($3.48).

Sheri Farley said they have had customers from every state and several countries. During the winter months, they offer skate rentals for $2, so customers can enjoy a spin on the outdoor ice-skating rink at the Huntsville Park next door.
