Ken and Kristin Fong, husband and wife co-owners of New Hello China in Clinton, worked at a Chinese restaurant in Ogden for about 15 years before deciding to own their own business.

A restaurant called Hello China operated in the same location as New Hello China for about nine years before the Fongs took ownership in July 2011. As the name suggests, the Fongs changed everything -- from the menu to the recipes used to create their signature dishes.

Kristin Fong said the new prices are lower, a welcome change for customers. One of the most popular entrees for spring is the Strawberry Chicken ($5.75), with fresh seasonal fruit, soup, ham fried rice and wontons.

Customers also like the spicy General Tso's Chicken ($5.75) and the sweet Orange Chicken ($5.75). All of the sauces are made from scratch with Ken Fong's own recipes.

On the appetizer menu, Kristin Fong said the Crabmeat Wontons ($4.50 for 10) are a huge hit. She sells hundreds every week.

The Chicken and House Lo Mein ($6.75) are in demand, with soft noodles and stir-fried meats and vegetables.

For those who prefer seafood, Fong recommends the Kung Pao Shrimp ($5.95) or the Cashew Shrimp ($5.95). Favorite beef dishes include Beef and Broccoli ($5.75) in a brown sauce, or Mongolian Beef ($5.75) in a spicy sauce.

The Fongs also sell party trays to feed 20 to 25 people ($120) that include shrimp and vegetable stir-fry, beef and broccoli, General Tso's chicken, lo mein, fried rice and 20 egg rolls.

Kristin Fong said she and her husband have enjoyed owning their own restaurant and changing things around to fit their style.

"Everything has been changed since the previous owners," she said.
